He left/quit his job to form a company.

Are both verbs fine?

Yes.
Both of those words can be used by themselves in the sentance, and you will retain the meaning of the sentance.

You can use either, but quit as a implication, at least to me, that he was angry.

Using the word "quit" would probably fit the sentance better as , if you use 'left his job'.. .. it could be considered more of a slang term
