Jenny fell ill. She ate some unclean food.

Jenny fell ill after she ate/had eaten some unclean food.

Which verb/s should I use?

Many thanks.

Jenny nibbled on a piece of sweet corn, which had toxic insects inside, and suddenly her insides turned to mush and she perished.

To be serious for a moment: Both are correct. "Ate" is past tense, "had eaten" is in the perfect tense. The choice really depends on the context.
