it's like crossing a cheese bialy with a bagel Smile (onion bialys are best of course)

the bagel I had was Montreal-style, not NY-style, so quite a bit denser/chewier than what NYers are used to

That doesn't mean there's no cheese inside as well. Our cheese scones and bagels have both.

The couple I've eaten were just topped with cheese and basically plain bagels inside. Not too imaginative.

Not sure what I'd call it if there was cheese inside.

I'm not 100% a bagel purist but I'd be concerned about the possible texture change and I am crazy for the chewiness of Montreal-style bagels.

BTW, NY bagels used to be way dense. They got softened up over the years as furriners influenced the way they are made.

I had a recipe for Montreal style bagels, but it's gone gone gone. I can look it up again, of course. I'd not gotten around to actually making them, lazy bum that I am.

Not a fan of the soft salty NY bagel. I like the denser ones that are more like Eastern European sesame rings/simit etc. The Montreal ones are most famous for being poached in honey water.

mmmmm St. Viateur bagels! the best.

hamburgboy once got into a bit of a tussle in my hometown - someone tried to grab the last Montreal bagels when they were delivered on a Saturday morning - no no no - hamburgboy needed those!

Just finished with breakfast. Had strawberry waffles and coffee on the America cruise boat on the Mississippi a few mile out of New Orleans. It’s just after 9am here.
