If you make a thread for politically correct kitchen behavior, then I could list a few things.

Politically incorrect is my norm. I'm such a rebel, eh? Laughing

The first time I saw risotto being made (by a fantastic male roomate who could make my heart skip a beat with his skills in the kitchen) , I was in awe. I said "Risotto? Is that like Rice-a-roni?"

You should have seen his face contorting in horror.

Boy, did I ever get a lot of beautiful meals cooked for 'educational purposes'. :wink:

Salt.
I confess I use salt in my cooking!
Often.
I could be hardening my own arteries & everyone else's, for that matter, but some things do not taste right without it!
And I say folk who say they never use it are fibbing! (or else they produce very bland food.) So there!

Oh yes it IS, Francis!
We are constantly being told to reduce salt intake to an absolute minimum, or to eliminate it from much of our cooking. Bad for the heart, the arteries, they keep telling us! The trouble is I really can't convince myself that "creative" use of herbs, etc, as a replacement, will quite do the trick for me.
