A group of us at work are trying to eat more healthy foods. To that end, we've been having Potluck Salad on Fridays. So far we've had Mexican, Mediterranean, and Oriental themed potlucks. Everybody builds their own salads, so some are probably more healthy than others, but there's been a good assortment of ingredients...
What other theme ideas could we do? Between fifteen and twenty people participate.
Greek salad - include feta cheese, olives, oregano, red onion and virgin olive oil with balsamic vinegar as dressing.
I'd go Middle-Eastern - falafel, tabbouleh, grilled veggies, lots of good yogurt dips, olives.
I'd also consider something like a picnic salad theme for an option - one group puts together green salads, at least one group does a non-mayo based potato salad, and another group puts together dessert/fruit salads.
Oh, good ideas! Now that it's warming up, the picnic one is a great idea. Maybe we could get the boss to go for tables outside...

If you aren't particularly vegetarian, a light chicken salad is goo, especially if you put in enough celery to give it a bit of crunch. Rice with cut-up bits of chicken, celery, small bits of carrot, dressing of your choice...delicious!
You can do the same thing with leftover beef. Using small pieces gives flavor with minimum calories and fat.
How about Italian? You could do a little caprese salad sorta thing:
bocconcini, mixed with fresh tomatos (the in-season cherry plums work best -- cut all spheres in half), some good olive oil, a little salt and pepper and some fresh basil and ....voila!
