Tonight: Grilled pork chops, twice-baked potatoes from the freezer section, steamed greenbeans sprinkled with dill and a touch of butter.

Leg of lamb marinated in a garlic marinade, with a paste of garlic cloves, fresh rosemary, thyme, seasonings and olive oil applied before popping onto the rotisserie.

Steamed asparagus and oven-browned potatoes.

My shift meal from the restaurant I work at: http://www.pangaeapub.com/

Although I won't be having anything off the sample menu on the site...I believe it will be a panino with baked tofu, avocado, fakin bacon, romano, and chipotle aoli...yummmm

London broil with teriyaki veggies - delicious!

Heat a skillet to hot with a bit of peanut oil. Toss in chopped veggies of choice (I used red peppers, green onions and mushrooms). Give them a quick stir fry and add a splash of soy sauce. Remove to a bowl. Place london broil in the same skilled and sear one side. Turn the meat and sear the other side. Pour in soy sauce, mirin, and rice wine vinegar (I didn't measure). Cook until meat is desired doneness (my london broil was thin cut so it didn't take very long). Add veggies back into the pan and heat through. Thicken sauce with cornstarch and water, if desired.
