Mixed greens (any kind you like) I like baby spinach and romaine
Add some chopped onions, grape tomatoes and grated cheese (cheddar or Jack work best)
For the dressing mix together ranch dressing and some good salsa,
Salt and pepper to taste.
Top with broken blue corn tortilla chips.

If you want to avoid the high fructose corn syrup, EDTA and processed oils in commercial brand dressing you can easily (and cheaply) make your own:
RASPBERRY VINAIGRETTE DRESSING
1/2 c. raspberry vinegar
1/4 tsp. each salt & pepper
4 tsp. sugar
2 garlic cloves, finely chopped (2 tsp.)
2 tsp. Worcestershire sauce
1 tbsp. Dijon style mustard
Combine all the ingredients and mix well. Refrigerate in a container with a tight fitting lid. Will keep for months. Makes 1/2 cup.
I would also suggest adding toasted sliced almonds or walnuts to the salad for a little protein.

Just made this for tonight's Mardi Gras pot luck. It's from this month's Louisiana Cooking magazine.
Muffaletta Pasta Salad
1 lb tri-color pasta cooked, drained, cooled
1/2 lb black forest ham diced small
1/2 lb hard salami diced small
1/2 lb provolone cheese diced small
1/2 lb grated parmesean cheese (reserve 2Tbs for garnish
3 cups olive salad
Combine everything in a large bowl. Sprinkle reserved cheese on top.
Easy peasy!!!

I made a pretty kick ass salad last night.
Butter lettuce
Raw thinly sliced apples soaked in lemon juice
Blueberries
paremesan
Feta
Bacon
olive oil
and a touch of balsamic
I like salad, any kinds of salad but for me the fresh vegetable salad is really the best for me. Yummy, I'm craving for vegetable salad now.

I've recently started buying organic tomatoes because they taste like tomatoes. Last night as a side dish to vegetarian black bean chili I made a simple salad of romaine, cubed avocado, tomato, queso fresco and lime juice. Delicious!

I love salad but not those that contain lots of ingredients just a simple one its good for health and adding olive oil to salad is just wow....
