Mac - whereabouts in Louisiana,( if it's not an impertinent question)?

Our gumbo was always chicken with okra and of course file powder. I don't think I ever had turkey gumbo myself.

Not impertinent at all. I grew up in Baton Rouge - we moved there when I was 8. Mom still lives there, so I get back now and then.

Oh, and on okra: I love it in gumbo and fried okra is good. But stewed okra (frequently stewed okra and tomatoes) is nasty, slimy stuff. Or at least every time I've tried it, it was. If someone has a recipe for okra that is neither fried nor slimy, I'd love to try it.
