I don't know of any hard numbers or percentages. I suppose there have been studies, but I've never looked into them.

Go down to the bottom of the page and click the "My Preferences" link.
Once you're on the preferences page, set "Show quote button:" to "Yes".
Maybe change some of the other settings to your liking while you're there. It's necessary to change the timezone offset every spring and fall due to daylight savings time.
Then click the big green "Update Preferences" button.
You will then have a "quote" button next to the "reply" button. You can cut-n-paste to break the quote up into smaller quotes if you wish to respond point by point.

It is good to use the preview button to review a post before submitting it, just to verify that you haven't bungled some of the quotes -- especially if it is a long and complicated post.
You can also edit or delete a post for up to 15 minutes after submitting it, if you happen to notice an error after you've already posted.
