Too many game types to really decide on a single best...
1st Person: Probably Half-Life, for all the reasons mentioned by everyone else.
RTS: Starcraft, but I haven't played too many RTS games.
TBS: Master of Orion 1
Simulation: Tie Fighter and/or X-Wing, though the "X-BTF" series was pretty good too... though paced a little slow.
Action/Adventure: Monkey Island
RPG: Never really play these.
Oh, and I can't go without mentioning Myth II... probably the most multiplayer fun I've ever had.

Christ, I was reading through this thread and wondering if anyone even had a clue as to what game started the whole 'online' explosion.
Half Life was an excellent game, certainly, but it wouldn't have existed without the groundbreaking innovations introduced by id software in Quake.
Best game of all time imo, and for bloody good reason.
This is true, Quake II was my fav, multiplayer on there was sweet! but i'm addicted to Unreal Tournament G.O.T.Y Edition, my bad Quake lovers lol
