I'd have to list 'em as follows:
1. Legend of Zelda: Ocarina of Time
2. Half-Life 2
3. Final Fantasy Tactics
4. Legend of Zelda: Majora's Mask
5. Final Fantasy X
6. Final Fantasy VII
7. Resident Evil IV
8. Half-Life
9. Diablo II: LoD
10. Starcraft: Brood War
I don't think I have to explain these. They're all phenomenal in terms of gameplay, graphics, sound, and replay value. Some, like Majora's Mask (N64) and Final Fantasy Tactics (PS) made my list for innovation and creativity.
...but that's just me.
Morrowind is good, though the fatigue level can get annoying, but it's all in the strat. Chrono Trigger is a good game, and intriguing storyline.
traditional RPG game: Chrono Trigger
first-person RPG game: Morrowind
console RPG: Shenmue, and Pokemon blue
2D fighting game: Street Fighter 2 Turbo
3D fighting game: Virtua Fighter 3, and Tekken 3
racing game: so far it's Need For Speed game but I
haven't played a lot.
adventure game: Spiderman 2 (hilarious dialogues)
classic game: Tetris, Contra.

Easy there Francis FFVII will be mentioned again for your sake and the order of the games you have there are debatable not unless if you didn't list them in any specific order (which I doubt).
I kinda just threw that list together, I was a little pressed for time when I wrote it. Those are my top ten games, but maybe not in that order. Incidentally, I don't want to order them, both because that'll cause a ton of controversy and I'm not sure I could decide which of these is the definite best.
I donb't know what everyone here thinks but the controllers for the PS3 look extremely stupid. They looklike ******* boomarangs!

Best videogame ever
My best videogame ever played is Bioforge, from Origin (PC). Not much replay value, but every scene is a challenge in many ways. It's a challenge, you can even compare in dificulty levels to Shadow Of The Beast (but it's not up to it).
That's an impossible question, unless you've all actually played EVERY video game to date. Not to mention you're spanning generation gaps, massive technology gaps, 7 or 8 distinct genre's of game, and it's still all a matter of opinion in the end.
But anyways, here are some of my favorites over the years:

Final Fantasy (the original)

Master of Orion II
Diablo II & DII:LOD

Shadowrun, Diablo II, and Star Control II are probably my all time favorites.
For sheer size and variance in gameplay I think GTA:San Andreas should be crowned champ, so far.
I would have to say "Golden Eye" for N64. It was the fuse to the dynomite of FPS's.
The best game so far is rated in terms how long I spend on it, and it will have to be the custom game of WARCRAFT III-The Frozenthrone-DOTA
I have spent 1 year playing it and I still crave for it.
Warcraft 3 followed by Halo
Fallout 2 - best RPG of all time bar none
Quake - kicked off th FPS revolution, gave birth to such things as 'clans' and 'deathmatch'
Counter-strike source - the counterstrike version for halflife 2. best shooter going at the moment.
WoW - Long live the mmorpg. Guildwars and City of Heroes are also worth a nod here.
Any of the Unreal Tournament series, or Unreal itself.
Painkiller is high up on my list as well.
It's refreshing that you have no problem, no regrets going from playing UT2004 to UT Classic, and can have just as much fun, and the graphics are still anything but bad. EVEN BETTER, almost any computer at this point can run the game without major problems. Mods abound, and online game play is just sweeter. No contest.
