Is the sentence below correct? Is there a better way of saying the same thing? Thanks very much.

The amount of EPA + DHA in the fish oil capsules differed by 29 to 106% from the amount stated on the label.

Yeah, differed is fine. Other choices could be "deviated" or "diverged," both of which have a more "negative" connotation than "differed" I think.

Yes. For example, the label stated 240mg of DHA but the gel capsule contained only 200mg, for instance.

If the point is that you're getting short changed, then you might want to use words like "misrepresented" or "overstated." That wasn't clear in the first post.

I don't know whether all capsules contained less DHA or EPA than indicated on the label. The original text uses the word "varied." I don't know whether varied would work in English:

The DHA content of the capsules varied by 29 to 104% of what was stated on the label.

(The researchers analyzed almost 300 capsules of a few dozen brands).
