Keep rollin', rollin', rollin'
Hope the creams are swollen
Keep them big wheels rollin', raw cheese
Through curd and whey and wipin'
Bind rind n ripen
Wishin' machines would handle these
All these cows I'm milkin'
With teats so soft n silken
Are waiting morn n night if you please
Move 'em on, head 'em up
Head 'em up, move 'em on
Move 'em on, head 'em up, raw cheese
Cut 'em out, ride 'em in
Ride 'em in, cut 'em out
Cut 'em out, ride 'em in, raw cheese

Fortunately, we don't have such problems since in the EU, Provolone (both Provolone dolce as well as Provolone piccante) must be originals.
our little corner grocer had a half fridge section of good Provolone from Cremona for a few days last week. A ridiculously good price - $2 per slab. Don't know where Doug got it and don't want to ask. A month ago it was Grana Padano. Can't wait to see what his next find will be.
