Thanks for that, mckenzie. Have never tried Jambalaya. In regard to the bacon grease, do you mean grease from rashers? Or the fatty part of bacon? (Trying to figure out where you'd get the stuff.)

I am no cook...but may I suggest Gary Hart's book "One Hundred Ways To Eat Rice"? I believe it's in it's second or third printing.......
