Your use of "in view of the fact" is fine.
However,
1. "did not cook" is past tense. "have to" is the present tense. It should be one tense of the other.
2. Should "dinner" be singular? This suggests that it happened only once.
3. "outdoors" suggests that you're eating outside. Do you mean that you have to have dinner away from home? You can say this by saying "out." People eat out means that people eat somewhere other than their home--a restaurant, for example.
In view of the fact that my mother does not cook, I have to eat my dinners out.
In view of the fact that mother mother did not cook, I had to eat my dinners out.
