Water keeps the air above it cool while the air over land warms. How does that affect the weather?

thats not quite correct and certainly not a complete explanation for weather changes.
ocean currents can either warm or cool the air mass above them.
cold water from the poles flow toward the equator, warm water from the equater flows toward the poles.
