Seeing as it's a simmering pot, I might suggest a gumbo. The last one I made had some duck, smoked turkey, a little ham, and a very black roux.
I'll bring teh wine...a nice Pinot Noir, perhaps?
I think a Cab-Shiraz blend would be more appropriate there hobitbob. With the gumbo spices, a good Pinot Noir would be overwhelmed. Bring cold beer and bourbon as well.
