It's about "chicken consciousness" in Hollywood movies. The chicken was a sacred bird in the ancient Sumerian religion because of its excessive timidity, its inability to fly and its obvious ridiculousness.
Pious adherents are supposed the stand up in the cinema when a chicken scene comes on screen and flap their elbows screeching individual versions of the noise a startled chicken makes.
The best chicken scene in my experience is the one at the end of Convoy when Kristofferson crashes his truck into a chicken factory unit.
