ain't no rules with chicken soup.

Chuck what's left of the chook in a big pot; cover it with water.

Then throw in any veggies you have left; any herbs hanging around; some rice or barley or what-have-you - to make it a bit thicker; some spices if you have them!

Cover with lid, and simmer a couple of hours. You may need to skim the surface a bit if the remaining chook was a bit fatty. Cook until it looks like soup - then eat it. Or refrigerate for after.

You can strain and freeze some - then thaw and add some more vegetables another time.

I'm good with all that.

last time I made soup, I strained out the bones and detritus, and gave it to the cats. she gave me a "doh" like I shoulda done something else culinary with them. but she didn't elaborate, just said, oh well, next time...

now it's next time.

Once I have boiled the carcass, I pull all of the good meat off of it, that was left prior to (if there was any). I then get rid of all of the bones and stuff I do not want to eat. I put it in the fridge over night. The fat rises to the top. I scrape all of that off and use the remaining broth to make soup. I usually saute' onions, garlic, carrots and celery (chopped) in butter then add it to my broth in a large pot - toward the end I will throw in some frozen peas - we like them when they still pop when you bite into them...we no like mushy peas. Then I can add rice or noodles and any leftover chicken. So yummy. And I have gotten most of the fat off of it - so it is fairly low fat and healthy - though there is a little butter.

Love chicken soup. Especially when I am sick. It's my favorite thing to take my friends when they are under the weather.

I'm beat. I could finish this tonight, but as foggy as I am, it would be another 4 or 5 o'clock kinda thing.

Ima try and take my happy pill and crash by 2.

sleep as long as I want tomorrow, and get up and tackle what I got left. no pressure on me but my own wanna be well push...

still liking my truck, but it's prolly gonna need a tranny soon, too.

oh well. at least this one is worth putting on into...

damn. the shockers lost a game they shoulda won...

oh well. #14 was pretty lofty anyways.

gonna hit the parts house and head for the ranch.

tried to find some goat yogurt to attempt, but only got as close as goat cheese.

so we're gonna try that instead and see what happens.

prolly on a pulled pork sammich. dint thaw the ribs last night Embarrassed

but I don't feel like cooking much anyways. I wanna get the truck finished so I can go run around and waste fuel...

I was finally well enough to get oot and aboot last night. Went to an American Tribal history/costuming workshop.

Missed the chicken carcass question.

After your chicken is roasted or you've made your soup - take the leftover bits and carcass - toss it in the oven to slow-roast the carcass - then make broth with any leftover veggie bits (the bits you might have garbaged in the past) you have hanging around and the roasted chicken carcass - then strain and freeze in ice cube trays - take the cubes out when you need get something going. Because the bones were roasted before you started, your broth will be much richer than you're used to. Easy-peasy and yum.

prolly next time. I'll have to invest in ice trays. (I have a chilled water dispenser, ain't done ice since I moved to the farm...)

kinda wonky, but smoky dragged me out earlier than I was ready for. he hadda go to the store for the crispy kid, and was chomping at the bit. I skipped breakfast.

and I don't have any approved food over to mr vw's just now. prolly reload him next time I get a payday.

got some noodles in to nuke. I'll be better shortly...

she knows how we tend to worry, she will report as soon as she's able, I'm quite certain.

I am horrid y'all. I am so humbled that you all would worry so. We are fine. The storms were fairly mild. The problem was I had to get up early to go to a tradeshow. I was up before 6:00am and had to get things ready for the kids and the man child since I would be gone all day. I got home last night at 8:00pm after standing on my feet for 12 hours. I went straight to bed.
Not an excuse though - no way I could excuse not taking time to come let you know.

Please forgive me for not checking in. It was incredibly thoughtless of me.
I should have been aware enough of your consideration to have come and let you all know I was fine. I was not very considerate.

Hugs to you all. Thank you so much again - and really I am so sorry.

I have to go back downtown again today. Will be late getting back home since I have to help them load to get back on the road.

I should be back tomorrow.
