I'm making my enchilada sauce now...(thanks, beth eh)

smoky is gonna start the oven soon. we're using his so I can make a bigger pan...

what a lovely day this was. still just in a sweatshirt outside working on my firewood situation.

winter will be back with a vengeance soon, methinks...

he doesn't eat bait.

my enchiladas may look better'n they taste. I don't have some of what I normally put in the mix, so I am substituting liberally.

who wants conservative enchiladas anyways...

accidental delicious leftovers. with a nod to JPB...

I saved the broth left from making the chicken filling. potato bits and garlic in good stock. added some rice noodles that were sent in a welcome to cooking gluten free care package. voila...

verra tasty chicken soup.

Even S-boy would like it, I bet...

I'm almost done with the enchiladas.

really struggling to finish. cooking while nauseous sucks.

hoping to regenerate a little appetite while they are baking...

snowplow guy tossed me a benjamin today. I think Ima go camp at the clinic until they tell me what is going on with my results while I have the entry fee to play.

too much mr hyde to my doc jekyl lately...

got my sauce in the freezer, it's still too hot to run my fingers through with the shells. this is a messy recipe...

took a walk out around the pond to help my unpleasant tummy. I can't wait for spring...

ok. gonna go wrap some tillas and be done cooking. got some battries charging for the camera. I needa go see the eagles tomorrow anyway. hoping to get some decent shots to share...

problems in whoville...

I soaked my shells in sauce, but they still wanna break when I try to roll them...

for the second pan, Ima soak them longer, but I dunno...

thinkin' mebbe to use the steamer to soften them up...

little help...?

(my previous experience was with flour shells, but that's no longer an option)

I can purchase a bag of them guaranteed gluten free for $1.50.

and I don't have to learn a new skill.

or dedicate any of the approximately 3 hours a day that I almost feel decent to making them...

I have had those on quite rare occasions

had to google the whole steaming thing

I do something similar with some crusty buns - steam em and then keep them in a tea towel til they're ready to be used

it's also a bit like preparing to use phyllo dough - you want to prevent it from drying out

smoky went back for a second one...

I nibbled, but have dire thoughts about ralphing a pain pill. ain't gonna happen tonight.

I have plenty for not to have to cook for a coupla days.

might even show up and surprise mr vw with an impromptu messcan feast...

I'm pickin' and nibblin' a little more.

verra tasty actually. with a zip. (spicy cherry peppers, I had no jalapeno)

just gonna finish this half-a-one. don't need any ugly log entries tonight.

I asked smoky today about building me a tepee out behind the garden.

he kinda don't care whatever I wanna do. I could build an obelisk to baal and he would say ok, whatever you want to do...

I have some really tall straight trees cut down that I hesitate to just make into firewood.

Ima read up on construction theories, and make me a ceremonial lodge. might even sleep out there with bubba on special occasions this summer...

the enchiladas were officially excellente...

snow coming Saurday. thunderstorms Friday. doctors appointment tomorrow.

must cut wood now.

I'll go get the splitter after it gets dark, and do it next to the big shop door with my floods.

damned weather gods...

BTW, a good way to soften up the shells is with the microwave if you've got one. If you're using tortillas you wrap them in a towel and nuke em for about 2 minutes.
