I am making a salad with kale, yellow and green squash ( cooked only slightly.. enough to make it soft) baby bok choy, and romaine lettuce topped with toasted sesame seed / vinegar and olive oil
I believe what Dys described on the first page is a variant of Red Flannel Hash... Just cook one, Shewolf, peel it and taste it. I steam them in the microwave, or you can cook it like a potato (but probably longer). The rest of that one might chop up well into your salad.
You can pickle them, as mentioned; mix them into hash, ditto; or try glazing them with orange juice concentrate and honey and a little lemon juice. Beets are good lots of ways!
