What can you do with beets?

I have 3 super fresh beets..

Fresh meaning they still have dirt on them, possibly still warm from the ground Cool


what can I make... ?


Im using the green part of the beets in a salad along with baby boc choy and romaine..


what about the beet?

You can make something pink..... A fourth grader wrote me a recipe for a pink potato salad. You could make pink cole slaw, pink soup.

You could also make a scene. chew one up and then scream wildly that and spit up pulpy blood red beet from your mouth (sorry, hanging out with kids too much).

I used to get a beet smoothie in GA. I think it was apple, beets and spirulina. It was the most god-awful color.

..honestly though.. I have never,in my life, tasted a beet.

Beets taste like dirt, basically. I like them, but many people don't.

Boil to soften your beets, then peel and slice them. Add 1/4 cup cider vinegar, 1TBSP sugar, little olive oil and a dash each dry mustard, salt and pepper. Chill in the fridge and presto! Pickled beets without the canning.

I like beets. boil up some (peeled/sliced) beets and (peeled/sliced) potatoes, when done (tender) place in skillet with some diced bacon and cook till bacon is done, serve.

juice them... it will make your urine blood red... make you flush.... can however paralyze your vocal chords temporarily...so good for you it's hard to describe.... major blood cleanser...juice with some carrots...

There should be some sweetness - after all, beets are an important source of sugar.

(google sugar beet)

I love beets - I prefer them cooked, cooled, and then diced into a tangy salad.
