quite accurate although venison Cervidae (deer) makes the best chili.

Sounds a lot like my opinion of emu meat. If your ever offered emu... dont bother.
Emu oil is a different proposition however. Get some if ya can. interesting roast chicken smell/flavour.
a lot of people were raising emus around here. Then the market just went bust because no restaurants would serve it. Ive eaten it and its more eefy than chickeny.
We had an Amishman with about 40 of them . They got loose and were running all over the township. So the nimrods were hunting "fast chicken"

My meatloaf turned out pretty darn good!
I mixed in some wine, egg, jalapeno jelly, mustard, spices.
The buffalo made it taste just different enough to notice
Next time they ask for something different I'm serving alligator!

Forget ground buffalo, flying buffalo is much leaner. Mmm fresh carpaccio and a bottle of aged chianti.

I've also eaten croc. margo, but not alligator They're a little harder to catch.
