There is a food that never goes off, you can leave it for a year or a thousand years and it will still be o.k. to eat.

What is it?

Honey needs to be "ripened" , wherein all the enzymes have convereted the nectars to the complex sugars. Most honey we buy is not ripened properly and will granulate and separate after a year or more, it can then spoil if taken from a freig and let to sit out. If its ripened , you can leave honey sit out and it will only darken.
I raise some bees and have had a background in beekeeping andI had bad experiences where the honey was taken freom the hives too early in the fall and granulated and turned . When it turns it gets sort of moldy smell like bad maple syrup.
