I got this wonderful recipe from MORE magazine. It is a great summer pinic item.
4 pounds mixed tomatoes, seeded and diced (about 10 cups)
1 teaspoon sea salt
1/2 cup olive oil
2 tablespoons balsamic vinegar
1/2 cup pine nuts, toasted
1/2 -1 cup crumbled feta cheese
1 cup thinly sliced scallions, white and green parts
1/2 cup chopped basil, parsely and thyme mixed
Just mixed it all up.
Enjoy -- there is a great picture of in this months issue with some other good summer pinic dishes.
Had no feta. Going to try it with pepper jack.

Hey! That's one of my recipes! I use french feta (less salty and softer) and toss with pasta.
I'm odd, I only like one brand of feta, and that's the French Val Breso...
none of my markets here carries it. Costco does, I think, but I've stopped doing Costco.

happytaffy - I don't think so. It just sort of morphed into existence. I love tomato and basil, I love pinenuts and french feta. I'll toss in some other fresh herbs if I have them (rosemary, thyme, scallions). It's a great summer dinner.
