Texas Scramble

1/2 cup new red potatoes, cooked & cubed
1 Tbsp butter
1/8 tsp. garlic powder
1 green onion, sliced
1/4 lb. sausage , browned & drained well
1/4 lb. Canadian Bacon or regular bacon
1/2 each red & green bell peppers, diced
3 eggs, beaten
Black pepper to taste
Dash of Spanish paprika
1/2 cup Cheddar cheese, shredded
1/2 cup Monterey Jack cheese, shredded
1/4 cup milk

In a non-stick skillet, place butter, garlic powder and cooked potatoes over medium heat for 1 to 2 minutes. In a separate bowl, add black pepper, paprika and milk to beaten eggs and pour mixture over the potatoes. Scramble eggs, constantly lifting with fork to keep eggs fluffy and to ensure even cooking throughout. Top with sausage, ham, green onion slices, bell peper and cheese. Cover and cook about 1 to 2 minutes to allow cheese to melt. Serve over flour tortilla in warm plate and add salsa to side.

I just tested how the soup is coming along - left over spaghetti w/two cheeses (that's another story) and hot ital sausage with chicken broth and .... wait for it, some thin sliced cabbage, soon to get some last minute added ital parsley. OK so far.

<Uh, I had to pick the tomatoes out of that leftover extravaganza. I didn't at the time have any fresh tomatoes and used cans of italian style stewed tomatoes, a new purchase for me, to make the sauce. DRECK! they must top off the tomato cans with sugar. Runs, tearing hair...>

Oh, and I recognize and like that scramble!!

Maybe tomorrow... sans bacon, which is probably my favorite food, but rare in my life. Sans sausage too, given I've already cooked with sausage this week. I talk about meat a lot, and like flavorful fatty meat of good raising and lots of types, but often use it only for flavor. Trying to get more mediterranean, which is hard to do fresh around here. Peppers, though, we've got peppers....
