Ok, the non-pupusas worked out. The masa in our market is not just the stuff in bags in the bakery section (ground corn cooked (I think) and treated with lime, but also packaged masa in the meat section (kept cold) that is already mixed with some water, which is what I had. So.. I added some water, and it was already too much. So it goes.
I played with pancakes, adding some baking powder and things I like, black beans and spicy diced cooked eggplant and already caramelized onions, chopped up, and some red pepper powder. Used the chicharone grease (a tad) with a little canola. I got impatient - didn't want to burn them, didn't want to stand over the stove for the rest of the afternoon.
So I made masa muffins - also good. Next time, a little more baking powder or soda.
Now I won't want to eat dinner.
I gather the usual papusa is made with way drier dough with some black beans mixed in and some cheese filling in the middle. Next time.
