I was watching my friend's kids this morning because she had an appt, and I can definitely say they are toddler approved.
* 2 pkg cornbread mix
* 2 T brown sugar
* 2 eggs
* 1 1/2C milk
* 9 hot dogs, cut into half/thirds/or pieces (depends how you want them distributed in the muffin. I did pieces since I had 3 toddlers here)
* 1C shredded cheese
400 degrees Grease muffin tins.
mix cornbread mix, brown sugar & cheese. Then whisk eggs&milk. Combine dry ingred. with wet. put in tins 2/3 full. add hot dog pieces in each muffin (make sure they are far enough in that they are covered by the batter.
Bake 14-18 min until golden.
YUM! Enjoy with mustard and ketchup! A little healthier than frozen ones, and they're not fried.
