In my pantry I always keep a big jar of couscous. It comes in handy when I have no potatoes in the house and need something to go with my meat.

I got to know and like it in France, it is the common staple for many Arabs.

I get is from my bulk food store. It is made of durum wheat and full of good stuff. To make a quick meal, one cup of couscous and one cup of boiling water, that's it, finished.
Is it the large or small variety? In the US, it can be tough to find the large unless you really look for it.
They are tiny little semolina, made in a complicated process.
