Another for the book:
Limoncello
Typically served after dinner, as a digestif. There's something nice 'bout sipping at an ice-cold shot of this on a hot summer's night!
4 cups neutral grain alcohol, or 100 proof vodka
Zest of 15 lemons, absolutely no white (pith) at all ( you could make a version of this with any citrus fruit zests)
2 2/3 cups sugar
3 1/2 cups water
Place the alcohol or vodka and the lemon zest in a sealable container.Allow to sit in a cool, dark place for 5 days. On the fifth day place the sugar and the water in a saucepan and bring to a boil, cook 5 minutes, remove from heat and cool. Add sugar syrup to the citrus infused alcohol/vodka let sit overnight. Strain thoroughly, coffee filters or cheesecloth work well. Chill for another five days before serving. Serve very cold (out of the freezer is best).

It only takes a few minutes. One of the best pieces of equioment you can get for your kitchen is a "micro-plane" zester,..it's basically a fine wood-working rasp,..but they zest citrus fruit really fast, while giving you excellent control to prevent getting any of the white pith. Best of all, you can get one for like $3.
