OK, this one is for the book.
I LOVE Bellinis, 'specially in the summertime!
For Six Servings:
Ingredients:
4 Fresh, Ripe White Peaches
1/4 Cup Peach Nectar
1 Tbls. Superfine Sugar
1 750 ml bottle of Prosecco, Cava or Champagne, well chilled (nothing too robust, light is good for this)
Peel, pit and chop the peaches. In your blender or food processor, puree the chopped peaches, nectar and sugar. Divide the puree evenly into six chilled champagne flutes, fill each with the chilled bubbly, serve immediately. MMMMM!!
Hey Jerry, could you copy this one to the the 'Summer Drinkies' thread too? We won't have decent white peaches until August
humm...could I do the same thing with Pears you think? Ill have well....quite a few here shortly.
