Here we go:

Apple Snack Cake

Ingredients:
1 1/4 c Boiling water
1 c Oatmeal (quick or old-
-fashioned, uncooked)
1 3/4 c All-purpose Flour
3/4 c Granulated Sugar
3/4 c Firmly packed Brown sugar
1/2 c Wheat Germ (any flavor)
2 ts Baking Soda
1 t Ground Cinnamon
1/2 ts Nutmeg
1/2 ts Salt (optional)
2 c Apples, peeled & chopped
1/3 c Vegetable Oil
1 Egg
2 Egg Whites
1 t Vanilla

Directions:
* Wheat germ adds a nutty flavor to this moist and delicious snack cake and oats add a special hearty texture. 1. Heat oven to 350F. Spray 13 x 9-inch pan with no-stick cooking spray or grease lightly. 2. In a large bowl, combine water and oats; set aside. In medium bowl, combine flour, sugars, wheat germ, baking soda, cinnamon, nutmeg, and salt; mix well. 3. Add apples, oil, egg, egg whites and vanilla to oat mixture, mix well. 4. Add dry ingredients, mixing just until moistened. 5. Pour into prepared pan. Bake 40 to 45 minutes or until wooden pick inserted in center comes out clean. 6. Cool completely on wire rack. Serves 20. NUTRITIONAL INFORMATION: 1/20 of recipe Calories 170 Calories From Fat 45 Protein 3g Total Fat 5g Cholesterol 10mg Dietary FIber 1g Carbohydrates 30 g Sodium 140mg

Are the apples quite sharp?

If so there is a wonderful pizza recipe for sharp apples

3 medium cooking apples (cored and peeled, chopped into small 2" chunks)
2 medium red onions (peeled and cut into wedges)
200g goats cheese (cut into 1" chunks)
tablespoon of thyme

pizza base of your choice - I usually make my own

fry the red onions until they are starting to colour, then add the apples and cook until starting to break down. Place on pizza base. Dot the goats cheese and sprinkle the thyme over the top.

Cook in preheated oven at 200C for approx 20minutes or until cheese is golden.

I'm going to try it again with better apples!

Tomorrow might be a great day to make apple cake. I'm partial to cakes over other desserts so.......

I don't have any wheat germ on hand though. I'm wondering if I could use some crushed almonds and almond flour and try to approximate the texture while still getting the nutty taste.

The cake sounds like it would travel well and we're going on a car trip to Seattle for four days. It sounds like a great thing to keep handy for snacks/breakfast/whatever.

And that apple pizza sounds divine! Unfortunatley my apples are a little flavor-lite. They're good but neither really tart nor sweet.

they do really need to be tart to get the best out of it (never use sweet apples for it - yeuch)

I just made that apple cake and it is sooooo good. It is really more like a quick-bread than a cake in both texture and flavor which is fine by me. I like it better than regular cake.

It is a recipe you could really play with too. I could imagine putting in dates, raisons, nuts - just about anything.

And, that pizza sounds really good to me. I've made onion pizza before, just not added apple to it (thinking, the sharp green ones, forget their name). But even sweet ones might not be terrible with it.
