This salad recipe seems to be very refreshing ---BBB
6 cups cooked chicken breasts, cubed
3 cups pears, pealed and cored, cubed
2 cups sliced mushrooms
1 cup low fat Italian dressing
In a large bowl, combine the above ingredients. Cover and refrigerate for 30 minutes.
3 cups seedless watermelon, cubed
6 ounces crumbled bleu cheese
Red leaf lettuce leaves
When ready to serve, toss the watermelon and blue cheese with the chicken mixture. Arrange the lettuce leves on 6 individual plates. Spoon the salad on to the lettuce leaves.
