Hi Lilac, welcome to Able2Know.

What you're thinking of as Western food is as different by country and region as Chinese food is by region.

Are there particular western countries whose food you are interested in?

Are you in northern or southern China? How would you compare it to the food in other parts of China?

Perhaps (speaking very generally, a greater emphasis on rice and less on beef?

But it's true; the US is so big that there are many many regional variations. For example, in Louisiana, rice is very popular, while Louisiana and the Southwest like spicy seasonings.

When I lived in Wyoming it was impossible to get lamb - people there never considered eating it themselves; it was raised widely, but all exported to other parts of the country. The butcher thought I was very strange when I asked for lamb chops!

Hi again, lilac.

There are a number of bean curd (tofu) dishes I really enjoy when we go to a Sichuan restaurant here in Toronto. There is one in a hotpot, where the bean curd is mashed up, and then cooked in little balls, that I find very tasty.

There is really nothing comparable in Western cooking.

hi
I hope you like the chinese food .
Actually, if you want to tast the inward food,
you would go to the producing area.
Of course,it's not easy for us to do it .

The thing I see when going to authentic Chinese restaurants is that the chinese folks don't order off the same menu, or not off the menu at all, as do the Americans. Their food is totally different than what is on our table.

My favorite chinese restaurant is Hunan Homes in Los Altos, California.

Please feel free to critique their menu:

I was in Gung Zhou recently and was served a dish of deep fried scorpian. Little ones, surprizingly tasty and crunchy.
