I'm having difficulties finding a good recipe for Durian pancakes. I'd like to create a pancake that's light and fluffy, yet I can't quite get a good recipe. The recipe I have mentions some sort of flour in Chinese, but I can't quite figure out what it means.

It's not that I can't translate it. I can read it fine. It's just that I have no idea what it is. So I've decided to ask around to see if any of you guys know any good recipes for Durian Pancakes.

Any help will be greatly appreciated.

Ain't that the Philippine fruit with a smell so bad it'll gag a maggot off a gut wagon? You wanna make pancakes outta that sucker ? ! ? ! ?

My mother does at least. I personally hate the stuff. She wants to know what flour to use so the pancake is nice and fluffy and almost like Swiss rolls in texture.

It's not just a Philipino fruit, you know.
