I LOVE GARILC!

Garlic Mashed Potatoes

Peel garlic. Put whole cloves into water with potatoes and boil. When potatoes are done, strain water out, leaving garlic in potatoes. Prepare mashed potatoes as normal. Yum.

Oooh, garlic mashed potatoes... mmmmm!

Just roasting garlic and using it as a spread on sandwiches or as a dip is really good too.

A few years ago, I was surfing for recipes using roquefort cheese and came upon this recipe for baked garlic. So good!

Raw.

Roasted.

Ground up with basil and pine nuts and olive oil (pesto sauce).

Sliced and cooked with green beans and red pepper flakes.

Sliced with spinach.

Minced on pizza.

Minced with butter on bread.

Stuck whole into a pot roast.

All good so far - and all things I've tried except for mckenzie's baked garlic with roquefort. Gotta love that one! Keep 'em coming!

THe Cowgirl Cafe in Santa Fe served an appetizer with baked brie, roasted garlic and toasted slices of french bagette. But, sorry, I don't have a recipe.

Garlic goes well with many foods. As noted earlier, it perks up your taters, also quite nice with a gently baked fish. Nice as an addition to many cheese dishes...how can you go wrong with garlic?

Then there's garlic bread and garlic added to cream cheese on a fresh garlic bagel...again, how can you go wrong with garlic?

Filetes de Pescado al Mojo de Ajo (Fish fillets in Garlic Sauce)

Ingredients:
1 lb white fish fillets
juice of 1/2 lemon
salt, pepper
8 Tbsp margarine mixed with 2 Tbsp veg oil
3-4 garlic cloves, sliced thin
1/4 c vegetable oil
1/4 c flour
Directions:
Marinate fillets in lemon juice, sprinkle with salt, pepper to taste.

Heat margarine and oil in skillet, stir in garlic over very low heat. Remove when golden brown. Keep warm.

Heat oil in large skillet. Remove fish from marinade, roll in flour. Saute in hot oil until fish flakes easily, 7-10 min. Turn once only.

Divide fish into 4 seving portions, serve topped with garlic butter.
