DIY: BBQ Sauce - Super Double Secret Ingredient?

I found myself without BBQ sauce tonight so I decided to make some.

Saute onions, garlic, and crushed red pepper, add tomato paste, vinegar, brown sugar, spices (seasoning salt, more garlic, paprika, chili powder), worchestshire, mustard. I think that's it.

It turned out pretty good. Not too hot, not too sweet, nicely tangy but missing something.

Do you make your own BBQ sauce?

What did I forget?

It was kind of fun to make my own sauce and I'd like to try it again some time.

I'd throw in some horseradish but the rest of your list looks pretty good.

I tried making some once and didn't have any horseradish so I substituted some Thai curry paste. If that idea ever strikes you just dismiss it. Wink

Ha!

I really did consider some hot chili sesame oil but held back on it! I wasn't quite ready for Tex-Asian fusion. I'm not that advanced yet.

I typically abstain from horseradish but maybe next time I'll give it a whirl. The sauce needed something to tart it up a bit but more vinegar didn't seem to be the answer.

Horseradish.... okay.... I'll try it.

For a sauce for pork ribs.....
1 clove of garlic
3 tablespoons of dry cider
6 tablespoons of dark soy sauce
1 tablespoon of tomato puree
1 teaspoon of mustard powder
1 tablespoon of soft brown sugar
A few drops of Tabasco sauce
Freshly milled black pepper

First,crush the garlic in a bowl.Pour in cider and soy sauce,then stir in the tomato puree,followed by the mustard powder and sugar and tabasco,then give it a good stir and season with pepper-no salt is required.Set aside the sauce for the flavours to develope.Brush the ribs with the sauce befor and after cooking.

For Chicken,I substitute 1 heaped teaspoon of ground ginger instead of the tabasco

Hmmmm soy sauce, huh?

That sounds very similar to what I made with the exception of the soy sauce and black pepper (which I don't like so I used crushed red pepper).

I took a chicken out of the freezer this morning. I have some leftover sauce AND some ginger....

Dinner is served!
