A researcher wanted to know the effect of different salinity levels (low - 3 to 5 practical salinity unit; moderate - 15 to 17 psu; and high-33 to 36 psu) to the growth and survival of six (6) different mangrove species as they age. Does it mean that the researcher has two independent variables (Mangrove species and salinity level) and two dependent variables (survival and growth)? What statistical test should be used? Is it a 2-way ANOVA?

Yes, two independent variables, yes, two dependent variables although you could consider failure to survive as zero growth and make it one, ANOVA is fine.
