What is baking soda?
NaHCO3 - Sodium Bicarbonate, a white, powdery substance. When acted upon in solution by acidic agents, it liberates Carbon Dioxide - CO2 - in the form of bubbles within the solution. Its what causes bread to rise. In its dry state, it also has a strong affinity for aromatics, which makes it an effective air freshener/odor control agent.

Thanks for that. I have an American recipe and I am Australian and we call it Bicarb Soda so I was not sure if it was the same.
