Here in Colombia many markets sell little "cordoronis" (at least that's how it sounds) eggs advertised as having no cholesterol. I'm assuming this in English is the cornish game hen. I don't recall ever seeing these eggs in US markets and with all the emphasis on personal health there I wonder why.
Those must be very tiny eggs if they are from a cornish game hen. In America it is easy to egg products without cholesterol (yolks are removed). Also Americans are very slow to take on new animal products. We are always being offered buffalo, ostrich, emu, rabbit and goat, but with little demand. Most of these products have a limited market in the US.
Those egg substitites are pretty ok. I don't eat eggs a lot so maybe I don't know my egg stuff but Egg Beaters isn't bad IMO.
There's a chicken supposedly producing cholesteral free egges. The breed is aracona, and that's very much a phonetic spelling.
