8 tbsp minced onion
8 oz white wine
2 oz lemon juice
2 cups whipping cream
4 oz fresh chopped dill
3/4 lb. butter
Pernod or Anisette to taste
That's right, 2 cups whipping cream and 3/4 of a pound of butter
Anyway ... Boil onions, lemon juice and white wine in a saucepan, reducing until there is almost no liquid left. Add cream and bring to a boil. Simmer until liquid is reduced by about 1/3. Place into a blender with the dill and puree. Add the butter in small amounts, continuing to puree. Return contents to saucepan and bring to a boil. Season to taste. Add pernod or anisette to taste.
