How long can fresh pasta dough rest before rolling?

I need to make about 300-400 raviolis for Christmas dinner. We always make them by hand. I use my Kitchenaid rollers (very cool) to roll the dough. How long can IU let the dough "rest" wrapped in plastic in the fridge? Anyone ever keep it a day or so?

You can keep it overnight in the fridge with no problems, but no longer. After more than a day, it tends to get black spots. Let it warm up just a bit before rolling. If you make the dough the day of, one hour of resting should be fine to rehydrate.

Thanks for the help. I'll make a couple batches tonight and pull them early tomorrow.

@pkaperick,
Before through your pasta dough on the pasta make, it will be fresh at least one half an hour.
