Anybody out there got a recipe for Banana Loaf? (Not with nuts)
Thanks in anticipation
2 ripe bananas
1/2 cup sour cream
2 eggs
1 1/2 tsp. vanilla
7 oz. flour
6 oz. sugar
1 tsp. baking soda
3/4 tsp. baking powder
1/2 tsp. salt
5 oz. soft butter
Puree bananas and sour cream until smooth. Add eggs one at a time, then vanilla. Mix together dry ingredients. Mix in butter and half of wet mixture. Add remaining wet mixture in two batches and mix for a couple of minutes to develop structure.
Bake in an 8-cup loaf pan for 1-1 1/4 hours at 350 until well browned and a tester comes out clean.
Cav, that sounds similar to the recipe that I use, however, I have never tried making it with sour cream. Sounds good, I'll have to try that next time
Thanks everyone! Cav........how much is in a cup?, we don't use that measurement. Can I omit the sour cream? (difficult to get where I live) I have everything else.

Phoenix........thanks for your post, how do I measure that in ounce's (old scales, imperial).
1 cup is approximately 8 oz. You can use double cream in place of sour cream, or creme fraiche.
Thanks for all posts.............
We are having:
Roast Beef
Yorkshire pudding
Roast potatos
Carrots
Peas
and gravy!
Your all welcome!
and of course....Banana Loaf. Ruth (daughter and heiress to the Morgan fortunes) is now calling it 'internet loaf'!
There is a veggie alternative, Mr S doesn't eat anything 'with a face'
Thanks for the invite, it sounds good...but it's still breakfast time here
You in USA? Are you having eggs over easy, pigs in a blanket, hash browns, pancakes and other Americanny things?
Breakfast in America..........who sang that? It's in my head now!
I'm from Michigan in the U.S. and I'm just drinking coffee for now
Supertramp - Breakfast In America
Take a look at my girlfriend
She's the only one I got
Not much of a girlfriend
Never seem to get a lot
Take a jumbo across the water
Like to see America
See the girls in California
I'm hoping it's going to come true
But there's not a lot I can do
Could we have kippers for breakfast
Mummy dear, Mummy dear
They got to have 'em in Texas
Cos everyone's a millionaire
I'm a winner, I'm a sinner
Do you want my autograph
I'm a loser, what a joker
I'm playing my jokes upon you
While there's nothing better to do
Don't you look at my girlfriend
She's the only one I got
Not much of a girlfriend
Never seem to get a lot
Take a jumbo cross the water
Like to see America
See the girls in California
I'm hoping it's going to come true
But there's not a lot I can do
Cheers for that Swimpy.....I'll be singing that all night!
I actually have a Banana Bread recipe. It's pretty rich, but very good. You'll have to convert to metric.
Banana Nut Bread
Sift together:
2 cups flour, 1 teaspoon baking powder, 1/2 teaspoon baking soda (bicarbonate) and 1 teaspoon salt.
Then Cream:
1/2 cup butter, softened; 1 cup sugar and add 2 large eggs, one at a time beating well after each.
Add 1 cup mashed bananas (about 2 large ones) and 1/2 cup chopped nuts (I like English walnuts)
Add dry to wet and stir just to combine. Bake in a 9x5x3 inch loaf pan at 350 F for about an hour. When a toothpick comes out fairly clean it's done. Be careful not to over bake.
