So, the underground network of the fungi existence is (to the best of your remembrance) composed of chitin? I'm dating myself in trying to recall my days of old in science classes, but is chitin of the same molecular structure that crustaceans, spiders and most insects have as their outer hard shells? A polysaccaride? Not hard to imagine, considering roots of trees are sometimes rock hard, yet allow for sweet and very tender fruits to be borne above.
