I made some stuffed squash last night that was really good. Here's what I used - the name will vary by region. I used three of them.

Cut the squash in half, remove the seeds, and place cut side down in a baking pan filled with about 1/2" of water. Bake at 400F for 30 minutes. While baking, make the filling.

Chop one small onion and saute in butter until soft, about 3 minutes. Add five italian sausages, casings removed, and brown thoroughly. Add about 1/2 cup of dry bread crumbs and mix well.

Spoon the filling into the cavities in the squash, then add a little maple syrup to each, and then top with a little brown sugar and more breadcrumbs. Return to the oven for 15 minutes. Serve.
