Some really good ideas here! Very Happy Thanks. I hope others are getting some inspiration, too!

Now I'm trying to figure out something a bit different to do with this here block of Tofu. Betcha I end up with another stir-fry! Razz

Hey, it took me a little while to figure out what po' me cuisine was .... Originally I thought it was some sort of regional southern US style of cooking! Laughing

Home made mexican food is cheap, simple, and tastes great.

Ex:
(makes two tacos - about one serving)

take a chicken breast (can be frozen) You can buy a big bag of frozen chicken breasts and throw them in the freezer.

Then defrost the chicken in the microwave, slice it

Pan fry chicken in vegetable oil with lemon juice, a little chile pepper, a little black pepper, salt.

you can buy a stack of tortillas for cheap. So take two of those, heat them up in the (now empty) pan until a little crisp.

Then, wrap your chicken up in there.

Dip this in guacemole' made by one avocado (they're expensive, but not when you get one per meal or when they are in season.) mashed with a fork and mixed in with a little bit from a guacamole or taco seasoning packet.

Voila!

I like this with orange soda.

Also, oyster stew is good and cheap.
Take one can oysters (in water)
mince
take a can of non-sweetened evaporated milk
boil until it (what is that word) does the thing where it gets all big. You'll
know it when you see it.
add oysters
simmer a bit
add salt and pepper to taste

serve with oyster crackers.


You should also figure out what poor people with good taste eat in your area. For example, I live in Texas, and I can get good, cheap mexican ingredients from the mexican supermarket in town. So, if you lived near chinatown you could shop where the lower income group chinese shoppers bought their food, etc. I personally like buying big bags of frozen vegetables from sams.

Also, don't forget about the fairly standard practice of buying a can of cheap soup and jazzing it up with fresh ingredients.

My roomate has an excellent meatloaf recipe (even people who hate meatloaf love it - but it's a family recipe so I'll need to get her permission before I post it.

You can buy curry mix in several varieties and spice intensities from asian/indian food markets. They make it really simple, just add it to whatever ingredients you are cooking.
