O.K. statesiders, here's the question, how do you make those pies that momma and grandmomma made, I'm talking about blueberry pie, apple pie, the pies that america stands for god dang it.

I even understand there is a pumpkin pie, come on yankee's spill the beans, just how do you make those pies?

I'm sure you'll get tons of responses. My pie crust is basic, 1/4 cup vegetable shortening or LARD as you Brits fancy Wink 1/4 cup sweet butter, 1 1/2 cups flour, pinch of salt, 1-2 tbsp. sugar (optional), 3-4 tbsp. ice water. If you master the crust grasshopper, you shall master the pie. <bangs gong>

For filling, well, it all depends... What did you want to fill your pie with? More acidic things need corn or potato starch to thicken, some people prefer tapioca... For apple, flour works just fine... If you want the pie filling to be clearer, rather than gravy~thick, use starch, not flour... I prefer less sweet pie filling... I make mine all from scratch and kind of make them up as I go along, but am told I make the best pie... (It's a gift, but I'll try to explain the particulars if I have more information about what sort of pie you want or imagine you want. ) :wink:
