You can also put the pressure cooker under running cold water, that drops the temperature quickly and you can jiggle the thingy on the steam vent to make sure all the steam has been released. My pressure cooker has a safety feature that makes it impossible to open unless the pressure has been dispersed. That being said, it's always smart to check the gasket every single time to make sure it's not worn. Not safe to use the cooker without a tight seal.
I use my cooker for fast pot roast, I have to check the manual for proper proportions, but I'll be back if anybody is interested in pot roast. My husband loves it during cold weather. It's almost too easy.
