Coconut Flake Pie

4 large eggs
1-2 cup self-rising flour (do not use regular flour)
1-1/3 cups white granulated sugar
1-2 stick of butter, melted
2 cups milk (you choice of butter fat content)
1 teaspoon vanilla extract
1 8-ounce can or package of flaked coconut

Preheat the oven at 350 degrees. Greased a 10-inch pie pan or dish.

In a large bowl, whisk the eggs until they are foamy. Add the flour and sugar and beat until well-blended.

Melt the butter in a cup in the microwave oven; add it and the milk and vanilla to the egg mixture and beat until well-blended. Stir in the coconut and thoroughly mix. Spoon the mixture into the pie plate.

Place the plate in the center of the oven and bake for 45 minutes. Do not over bake even if the pie does not seem firm.

Remove the pie from the oven and let it cool for 1/2 hour. Then refrigerate the pie to allow it to firm up without spoiling its creamy consistence.

Serve cold. You may garnish the pie with slices of your favorite fruit or berries, or garnish with a sprig of mint and a twist of lemon.
