Pronoun vs. No Pronoun (relative clauses)

Compare these sentences:
1. We went to the shop that Lucy recommended.
2. Water, which is very beneficial, people don't drink it.

Why does sentence number 1 not have a pronoun such as (it) at the end of the sentence similar to sentence number 2?

Because sentence 2 is the ungrammatical one.

Because it would be non-grammatical. The pronoun 'it' is not needed in that sentence. It is clear from the sentence that the word 'shop' is the intended reference so the pronoun 'it' would be inappropriate.

Sentence #2 is non-grammatical and also makes no sense.
